Seriously, It's the grilling holiday of the year??

[Yes I am exaggerating a little but seriously... it should either be like this outside or SUNNY AND WARM!]


Yeah, it would be a lot more believable that it is Memorial Day if it weren't 28 degrees outside and on the verge of snowing!


I feel so sorry for my poor ol' grill outside, all he wants is to grill oozingly delicious bison burgers, scrumptious salmon fillets and flavorful spatch-cock chickens... but I guess he is just going to have to wait until the weather actually acts like the season it's suppose to be! If I were a nicer "owner" perhaps I would cover him up with a grill cover but... eh, I am just trying to "butch" him up so he can grill up a mean steak when the sun is shining!!!


So really since grilling is out of the question today... unless my father and I decide we are DIET HARD... I wonder what will be on the Memorial Day menu today! Honestly... this day probably won't be treated like any other day because we are not having anyone over to celebrate. To be honest, I would be surprised if my parents and I even stay up until 8 pm tonight.


You see, we just got back from Turkey the other day [AMAZING, by the way, but that's for another post]... and we are all still suffering from jet lag. Currently it's 6:30 am... and let me tell you, it was VERY hard for me to stay in bed until now! I have been up since 5 [thanks in small part to my dog who decided he is fighting jet lag too and had to make sure EVERYONE knew that], laying in my bed wondering what the EFF to do... Typically I would get up and work out... but knowing that I really have no plans today, I told myself, DON'T EVEN THINK ABOUT IT... So yup, here I am now... actually ATTENDING TO MY BLOG!


Any ways, back to the whole Memorial Day thing...


What are all of your plans? When I close my eyes and think of previous Memorial Days I think of burgers... ketchup... mustard... salmon [we're a big fish family!]...


So do you "follow the trend" and make the typical Memorial Day fare, or do you create nifty original concoctions that no one would even think about making?!?!



All I can say is... please don't go NUTS on the fatty fare today!


- If you want potato salad, nix the mayo and use olive oil...

- If you want to grill up some mean hot dogs... try these... I have taste tested them for you...

- Or if you want some burgers... go exotic and try and find some grass-fed bison, elk, ostrich, beef... simply delicious!

- Oh and as for condiments... try this ketchup... AMAZING!

- For fried chicken... why not roll those chicken legs in hemp seeds or crushed up flax seeds?? Um, healthy, nutty, delicious, no?!

- And instead of re fried beans... cook up some black-eyes peas! [Or really have the beans but simply boil them in salted water!]

- Hm... and yes, I know there is dessert and it's rather tricky to find a substitute for the real thing... so while I would suggest berries with maybe a touch of whip cream [if you must]... having a TINY bit of the real thing probably won't kill you... TODAY! ha ha ah! Oh but wait, I have heard that grilling fruit is actually pretty tasty... so jump on that before you dive head first into that huge apple pie!


Good thing my grill cannot read this post or else he'd start getting antsy... who am I kidding though, I am antsy for the both of us... perhaps I will be "die hard" today?!


PS: Don't forget to take some time to remember those who have fallen, after all that is what this holiday is about... not just gorging ourselves with food!!!

The Other Red Meat...


Ever heard the saying: "The other white meat"? When you do hear that, it typically refers to PORK... as apposed to white meats such as Chicken and Turkey.... Well what if I wanted to talk about the other red meat... what do you think I would be talking about?


....



Alright, give up? I'm talking about OSTRICH! That's right, this bird is full of delicious and nutritious red meat!



So if you're looking for an alternative this summer to your typical beef hamburger... look no further than ostrich! It's lean and delicateness don't detract one bit from it's amazing flavor! It's so hard to describe it's flavor, you just have to see for yourself.


What isn't hard to tell though is how healthy this red meat is for us! With only 97 calories in 3 ounces... Ostrich has 2/3rds less fat than grain-fed beef or pork and 1/2 the fat of chicken! This meat also has more iron than beef, chicken, turkey or lamb and it even DOESN'T contract harmful bacteria like E-coli and salmanila because all Ostrich has very high pH levels (the body's balance between acid & basicity - having high pH means they have a bit more acid to kill off bacteria). Oh and did I mention that ostrich is extremely high in protein, very low in fat (and the fat it does have is the healthy kinds - omega 3s) and also very low in cholesterol!


Now I know you are curious and want to try it out! Well in case you were also wondering... ostrich meat comes in cuts similar to beef and lamb (with sirloins, steaks, ground meat, etc)...


Doesn't this meat sound like an extremely healthy investment?! No
w the only trouble is finding where to buy it. If you have a Vitamin Cottage near by... that would be the first place to look (freezer section)... but if you don't have one close by (or they don't offer any there) I have a few on-line sources where you will be able to get your monies worth: So I do hope you all take advantage of this meat! If only fast-food joints were serving up this good stuff - maybe I would actually go to one!!

***Oh and by the way... here is a little TRIVIA for you: Ostriches (obviously) lay eggs.... and one of their eggs can feed 12 people!!

Crazy Stir Fry Combinations!!!


Vegetables... Meat... Seasoning... All these ingredients (PLUS MORE) can be found in stir-fry recipes which is why I adore them so much! (And why places such as Mongolian BBQ always get my service - ha ha). I won't lie to you though, I eat a limited diet so my combinations may not be as "crazy" as others who do not restrict foods (allergy issues - long story)... but I find my combos still pretty "top-notch" and delicious which is why I thought I could share a few combos with all of you!



1. Diced Chicken Breast or Turkey Breast, Chili Powder, Garlic, Olive Oil, Salt, Pepper, Bell Pepper Strips, Cilantro, Sliced Onions & Olives

2. Diced Chicken or Turkey Breast, Sun-Dried Tomatoes, Olives, Capers, Green Beans, Sliced Onions, Garlic, Olive Oil, Salt & Pepper (Can be made with WHITE FISH of any type as well) 

3. Diced Chicken or Turkey Breast, Water Chestnuts, Diced Tomatoes (or Sun-Dried), Broccoli, Olive Oil, Basil, Garlic, Pepper & Salt

4. Salmon, Diced Cabbage, Straw Mushrooms, Spinach, Swiss Chard, Kale, Olive Oil, Red Pepper Flakes (a tiny bit), Onion Powder, Garlic, Salt & Pepper


5. Ground Elk, Diced Zucchini & Summer Squash, Sliced Onions, Olive Oil, Chopped Button Mushrooms, Garlic, Salt, Pepper & Red Pepper

6. Squid, Tomatoes, Red Wine, Olive Oil, Olives & Sliced Onions

7. Octopus, Paprika, Diced Olives, Red Wine, Olive Oil, Thyme, Basil, Lemon Juice, Salt & Pepper

8. Ground Bison, Diced Eggplant, Sun-Dried Tomatoes, Oregano, Sliced Onions, Olive Oil, Garlic, Fennel Seeds, Salt & Pepper

9. Salmon, Fennel, Lemon, Celery, Green Bell Peppers, White Wine, Olive Oil, Salt & Pepper

10. Clams, White Wine, Clam Juice, Chopped Parsley, Diced Shallots, Garlic, Minced Anchovies, Olive Oil, Thyme, Salt & Pepper  

11. Ground Ostrich, Spaghetti Squash, Canned Tomato Sauce, Diced Onion, Green Bell Peppers, Salt, Pepper, Olive Oil, Oregano & Basil  

12. Ground Grass-fed Beef, Artichoke Hearts, Olives, Capers, Diced Zucchini, Sliced Onions, Olive Oil, Salt, Pepper, Thyme, Rosemary & Garlic 



13. Tuna, Green Beans, Sun-dried Tomatoes, Hard Boiled Eggs, Olive Oil, Garlic, Artichokes, Salt & Pepper

14. Sea Scallops, Diced Leeks, Olive Oil, Garlic, Clam/Seafood Broth, Shallots & Diced Cabbage

15. Ground Turkey Breast, Diced Cauliflower, Bell Peppers, Onions, Garlic, Dill, Chicken Broth, Olive Oil, Sage, Thyme, Salt & Pepper

16. Hard Boiled Eggs, Shallots, Asparagus, Olive Oil, Olives, Salt & Pepper 

17. Ground Grass Fed Lamb or Goat, Spinach, Olive Oil, Garlic, Ginger Root, Curry Powder, Tumeric or Curry Powder, Salt, Pepper & Cardamon 


**So for the moment that's all I could come up with off the top of my head... but if I come up with more crazy, yet healthy concoctions I will certainly keep you POSTED - PUN INTENDED!
